Aaditis Southern Podis


"Podi" is a common term for the word "powder" in South India. Aaditis brings you delectable Southern Podis culled from traditional recipes used in the southern Indian states of Andhra, Karnataka, Tamil Nadu, and Kerala. Podis, in reference to powders used in culinary preparations, generally means roasted and powdered lentils along with spices. These podis are used along with traditional dishes like idli and dosa in South India. There are different ways one can use podis: garnish dosas, idlis, khaman, dhokla, or handvo, or mix with ghee and eat with hot rice, or mix with curds for instant chutney. You may even use it on buttered toast! Aaditis offers home-made southern podis using choicest ingredients, each formulation conferring a unique taste, and enhancing flavour. Aaditis Podis

At the moment we offer only a few podis. We hope to bring you more in the time to come. Podis are traditionally associated with South India where it is a practice to consume podis either with dosas, idlis, and rice, or use it as a base for chutneys. Podis have a unique culinary profile: They are crunchy due to the presence of roasted lentils, and they are also flavorful due to the use of traditional spices like red chillies (we use Guntur Sanam chilis in our podis), cumin, pepper, and cardamom.

Heena

Heena podi has strong notes of curry leaves and coriander, with lighter tones of roasted lentils mixed with some spicy flavors. It is hot and goes well with bland preparations like idli, dosa, khaman, dhokla, handvo, and can even be used for pizzas, burgers, and sandwiches. Add it to bhel for a spicy, crunchy feel! Your imagination is the limit.

How to use

Simply sprinkle over boiled rice, add ghee, and enjoy. Sprinkle over idlis, dosa, khaman, dhokla, and khandvi, either plain or mixed with ghee. Mix with coconut paste, curds, onion paste or tomato paste to create an instant chutney. This chutney may be used for sandwiches, pizza, samosa, paratha rolls, and just about anything you can think of. You may even add it to curries if you wish. Geeta

Geeta podi

Geeta podi comprises of a mix of roasted groundnuts, shahjeera, lentils, some curry leaves, and spices. It has a flavor base of shahjeera and other spices, and a nutty taste of groundnuts. It is hot, tangy, and goes well with bland dishes.

How to use

It depends on the food you eat. For instance, you can take hot rice, sprinkle Geeta Podi, and then add a couple of spoonfuls of ghee and enjoy. For idlis, dosas, khaman, khandvi, dhokla or similar foods, you can either mix with ghee and enjoy or sprinkle the powder on your food and eat it. Another way is to add coconut milk or curds to the podi powder and create a tangy, delightfully refreshing instant chutney. Try it on burgers and pizzas to get a uniquely distinctive taste and flavor. You may even add it to curries.

Meena

Meena podi is a mix of roasted sesame seeds, lentils and spices with a sweet, tangy taste and traditional flavor. It goes well with traditional foods.

How to use

Meena podi may be sprinkled on dosas, idlis, and other foods like khaman, dhokla, handvo, khandvi and fresh boiled rice, either plain or with ghee. It may be added to curries. You may use it plain or mixed with curds. You may make a paste using Meena podi and tamarind or curds or coconut for an instant chutney that goes well with pakoras, samosas, and kachoris.
